Bulk Beef FAQ

Buying bulk beef for the first time comes with a lot of questions, and that’s perfectly normal. Our goal is to make the whole process simple, transparent, and stress-free so you know exactly what you’re getting from our Missouri family ranch. Below you’ll find straight answers to the things folks ask us most—everything from deposits to cut sheets to how much freezer space you’ll need.

Ordering & Deposits

Your deposit simply holds your ¼ or ½ beef on our processing schedule. It goes toward your final total—nothing extra or hidden. Once the processor gives us your date, we’ll email you with next steps. You can see the full deposit process on our Bulk Order Process page.

As soon as the processor assigns us a slot, we notify customers in the order deposits were received. Most folks get their date range within a few weeks, depending on the time of year. You’ll get an email from us with the exact day your beef is headed in.

The final balance is due once your beef is processed and we have your exact hanging weight. We’ll send you an invoice by email with clear totals and pickup instructions. No surprises—just straightforward Missouri ranch business.

Processing & Timeline

The timeline mainly depends on when our cattle are ready for harvest and what time of year you place your order. Busy seasons fill up quicker, and some months our processor books farther out. Most folks can expect around 2–3 months from deposit to pickup, but we’ll keep you updated every step of the way so you always know where things stand.

Your animal is taken to our trusted Missouri state–inspected processor, where it’s weighed, aged, cut, packaged, and frozen. They’ve processed our beef for years and handle everything with care. Once your beef is wrapped, boxed, and frozen solid, we’ll let you know it’s ready for pickup in Sedalia.

Cut Instructions

Once your processing date is set, we’ll email you a link to the processor's submission form. If it’s your first time, don’t worry—we walk you through every choice from steak thickness to roast size. Basic cuts are included, and we offer tips for feeding a family on real-world meals. More details live on our ¼ Beef and ½ Beef pages.

Absolutely. Many of our customers are first-timers, and we’re happy to make recommendations. We keep things simple so you get the cuts you’ll actually use, not fancy options you don’t need.

Weights & Pricing

Hanging weight is what the beef weighs right after harvest, before trimming and packaging. Your final take-home weight is usually 60–70% of that number once bone, excess fat, and trim are removed. We price our beef by hanging weight because it’s the fairest and most consistent measurement.

Most ¼ shares end up around 90–120 lbs of packaged beef, and ½ shares usually land between 180–240 lbs. Every animal is different, but these are good averages for planning freezer space and budgeting.

Your final total is based on the exact hanging weight of your animal plus standard processing fees. We’ll share the weight right after harvest so you know your number before pickup. No markups, no surprises.

Pickup & Storage

Once the processor tells us your order is frozen and boxed, we’ll send pickup instructions and their address in Sedalia. You’ll pay the processor directly for their fees at pickup. Everything will be neatly boxed—easy to load and take straight home.

Plan on roughly 4–5 cubic feet for a ¼ and 8–10 cubic feet for a ½ beef. A small chest freezer works great for most families. If you’re unsure, send us a picture of your freezer—we’ll help you figure it out.

Vacuum-sealed beef keeps its quality for 12–18 months when stored properly. It stays safe even longer, but we recommend eating it within that window for best taste. Keep your freezer cold and don’t leave boxes or bags open.

Ranch Practices

Our cattle are pasture-raised and grass-fed their whole lives, then grain-finished the last few months for flavor and tenderness. We never use added hormones, and antibiotics are only used if an animal is truly sick. Healthy cows on good Missouri pasture—that’s the foundation of our beef.

Shipping & Merch

Bulk beef is local pickup only in Sedalia, MO—we don’t ship frozen beef at this time. Merch (hats, shirts, etc.) ships anywhere in the U.S. and usually goes out within 3–5 business days. You can find merch details on our Shipping & Pickup page.
