Bulk Beef Order Process

How We Estimate Your Final Price

Bulk beef pricing can feel confusing if you’re new to it, so we like to explain exactly what goes into it before you ever commit to a full share. Your final cost is based on several real-world factors that change throughout the year, and we want you to understand how those pieces fit together.

Here are the main things that influence your price:

1. Current Beef Market Prices

Cattle prices at Missouri auctions shift week to week. When the live-cattle market rises or falls, it affects the base value of the animal you’re buying a share of. We keep a close eye on local market reports so we can give you an honest estimate that reflects what’s happening in real time.

2. Local Bulk Beef Market

Every region has its own going rate for freezer beef. We compare our pricing with what other reputable Missouri ranches are charging for ¼ and ½ shares, making sure you’re getting a fair deal that lines up with the current bulk-beef landscape—not grocery store pricing, not bargain-basement shortcuts.

3. Feed Costs & Finishing Expenses

The cost of hay, grain, minerals, and the overall expense of finishing cattle to a good, healthy weight plays a big role in the final price. Feed prices can swing quite a bit throughout the year, and we adjust estimates based on what it takes to raise a well-finished, great-tasting steer.

4. Processing Costs

Kempf’s Meats sets their own kill fee and processing charges. These aren’t marked up or hidden—we simply pass them through. Processing fees vary depending on your share size and cut instructions, and we’ll walk you through what to expect.

Bulk Beef, Made Simple and Personal

Buying a ¼ or ½ beef shouldn’t feel confusing. At CA Wilson Cattle Co., you’re not ordering from a big-box store—you’re buying straight from a family who raises your beef with care. That’s why Caleb walks you through everything personally, from your first deposit to the moment we help load your beef into your vehicle in Sedalia.

Here’s exactly how the process works, step by step.

Start by choosing a ¼ or ½ beef share and placing your deposit right on our website.

That deposit holds your spot and tells us you’re ready to get the ball rolling.

Once your order comes through, you’ll get a confirmation email letting you know that Caleb will be reaching out soon to schedule your beef planning call.

After your deposit hits our inbox, Caleb gives you a call or text.

This call is simple and friendly—just a chance to talk through:

  • What cuts you enjoy
  • Your family’s eating habits
  • Freezer space
  • Your timeline
  • Budget expectations
  • How bulk beef works if this is your first time

It’s also the moment we make sure bulk beef is truly a good fit for your home. If it turns out now isn’t the right time, your deposit can be refunded. This is the only point where deposits are refundable.

If everything looks good, Caleb finalizes your order and moves to the next step.

During your call, Caleb will gather your cut preferences—steak thickness, roasts, ground beef, bones, etc.

You don’t have to fill out any paperwork or contact the processor yourself.

We'll handle all of that for you.

If you don’t care about every detail, he can recommend a “standard family cut” that gives you a balanced mix of steaks, roasts, and ground beef.

Depending on where we are in the feeding cycle, your timeline may look slightly different:

If the animal is already being fed out:

Caleb will give you a general processing window right away.

If feeding hasn’t started yet:

He’ll let you know when finishing begins and will follow up later with your estimated processing window.

Either way, you’ll always know where your beef is in the process. No surprises, no guessing.

When your steer is ready, Caleb will call, email, or text:

“We’re taking your beef in on X date.”

He’ll also give you a rough idea of when it should be ready for pickup, based on normal aging and processing times.

Once Caleb drops your beef off at Kempf’s Meats in Sedalia, MO, he receives a firmer pickup window from them.

He’ll update you right away with that tighter range so you can plan ahead.

Together, you’ll confirm what pickup day works best for you.

During this time, Caleb will also walk you through:

  • Estimated total cost
  • How processor fees work
  • What you’re actually paying for (your share weight + kill fee + processing fee)

We shoot you straight from day one, so the whole process stays clear and predictable.

Pickup happens at:

Kempf’s Meats – Sedalia, MO

Here’s how it works:

  1. Caleb meets you there.
  2. He pays Kempf’s directly for the kill and processing.
  3. He calculates your final total (share price + processor fees).
  4. You pay Caleb the full amount—Venmo preferred.
  5. Once payment is received, Caleb helps load your neatly boxed, frozen beef into your vehicle.

Your beef will be vacuum-sealed, labeled, and easy to stack. Most families are surprised how clean and organized it all is.

Whether you order a ¼ or ½ share, you’ll have a freezer full of local Missouri beef you can trust—raised on our Century Farm and handled with care from start to finish.
